Buy only good quality back ribs!

  • The night before, remove the membrane from the concave side.
  • Coat liberally with your favorite BBQ Rub and place into the fridge overnight.
  • Smoke at 195 - 205 degrees for about 10 hours until done.
  • During the last 2 hours, baste with your favorite sweet BBQ sauce every 30 minutes and turn over.
  • Remove ribs from smoker and put them into a metal pan.
  • Pour about 1/3 of a beer into the pan and cover with aluminum foil.
  • Turn smoker down to about 150 - 160 degrees and place them back into smoker for another hour.

They should be fork tender and mighty delicious! Enjoy!
