Venison Roast

- 1/4 lbs. salt pork, sliced into thin strips
- 3-4 garlic cloves, cut into slivers, rub on roast
Basting Sauce:
- 1/2 cup honey
- 1/2 cup soy sauce
- 1 cup orange juice
- 2/3 cup ketchup
- 1 cup wine vinegar
- 1 tsp dry mustard
- 1 tsp paprika
- dash of Tabasco
- salt and pepper to taste
Cut slits into roast and insert pork strips. Baste with basting sauce while on rotisserie. Cook 3-4 hours at 145 degrees. Venison needs to reach 160 for safe consumption.
