  • 1/4 lbs. salt pork, sliced into thin strips
  • 3-4 garlic cloves, cut into slivers, rub on roast

Basting Sauce:

  • 1/2 cup honey
  • 1/2 cup soy sauce
  • 1 cup orange juice
  • 2/3 cup ketchup
  • 1 cup wine vinegar
  • 1 tsp dry mustard
  • 1 tsp paprika
  • dash of Tabasco
  • salt and pepper to taste

Cut slits into roast and insert pork strips. Baste with basting sauce while on rotisserie. Cook 3-4 hours at 145 degrees. Venison needs to reach 160 for safe consumption.
